Cabbage Rose


This is my last segment on our autumn garden series. It features the cabbage (it is not hard to figure out how the "cabbage rose" received its name, is it?). I suppose I could have named this post "Cabbage Rows" just as well... Again, we just made a row in the earth, placed in seeds and watered. I must admit that we only had a few of these do well. Some creatures were really enjoying it. Once the damage was done, we read that you could place your wood ash around each plant and that really helps deter them. So, we will try again next year (and hopefully remember about the wood ash before destruction comes!)...

Benefits of cabbage:
  1. Excellent source of vitamin C (richer in the source than oranges!)
  2. Excellent source of fiber
  3. Good source of sulphur 
  4. Natural detoxifier
  5. Rich in iodine
  6. Vitamin E, calcium, magnesium and potassium are also present in cabbage.

Serving Suggestions:
  • Chop up and add into a vegetable garden soup
  • Creamy Cole-Slaw
  • Cabbage Salad (see recipe below)
  • Sauerkraut


Confetti Cabbage Salad Recipe (printable version below)

Mix together in a large bowl:
             1 large cabbage, chopped fine (approx 14 cups)
              1 red bell-pepper, chopped (approx 1 cup)
              1 cup finely sliced green onions
              ½ cup of parsley/cilantro (your choice)
              1 cup frozen white sweet corn

Mix together this dressing in a quart jar:

·     1 cup white vinegar *
·     1 cup sunflower oil
·     1 tsp. sea salt
·     5 tsp. organic sugar (or to taste)
·     pepper to taste (or some cayenne)

Add dressing to vegetables and mix really well. Chill and serve. 

Yields: One large 4 ½ quart Serving Bowl.

*Variation: You can used seasoned rice vinegar instead of white vinegar and omit the sugar. It comes out a bit sweeter. The above recipe is more tart. Very flexible recipe and very healthy!

  1. Oh!! Your salad looks delicious!! I will have to wait for awhile until I can sample this sadly as I am almost finished with another pregnancy and of course cabbage and breast feeding don't normally mix to well ;) I will keep this on my list for when I can eat cabbage again! :o)
