Polka Dot {Chocolate Chip} Banana Bread ~ Printable Recipe


Like the saying goes, when life gives you rotting bananas,  make banana bread! Okay, maybe that isn't the exact saying, but you get the idea. When I see those beauties browning, I think yummy thoughts! Here is a recipe I call "Polka Dot Banana Bread" due to the fact that there are mini chocolate chips inside. Grab a glass of milk and you are all set for a tasty treat.


Ingredients:
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 cups all purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 2 overripe bananas, mashed in a small bowl
  • 1/2 cup mini chocolate chips
Combine the dry ingredients in a medium sized bowl (except chocolate chips). In a separate, larger bowl, cream together the butter and sugar. Add the eggs to the butter/sugar mixture and beat well. Now, alternatively stir in the dry ingredients and then some mashed banana in to the butter/sugar/egg mixture and then go back and forth mixing in until everything is inside the one, larger bowl.  Fold in the chocolate chips last.

DO NOT OVER MIX, just stir until the ingredients are just combined.


Pour into a greased loaf pan. We used a 5 by 9 inched one. Let stand at room temperature for 20 minutes. Now, bake at 350 degrees for 45 minutes to 1 hour. I usually check the middle sides with a toothpick after about 45 minutes.


When testing toothpick comes out clean, then the bread is ready. Let it sit for an hour in pan prior to serving.
