Welcome to our Saturday morning staple, hot coffee and warm muffins! These golden treats are quite addictive, especially when you know there isn't an ounce of white flour or sugar in them (since you know they are healthy, you may find yourself eating more ~ ahem). They are sweetened with honey and taste deliciously moist!
To Make the Mix ~
Place inside a quart-sized jar the following ingredients:
• 3 c. oatmeal
• 2 tsp. baking powder
• 1 tsp. sea salt
• 1/2 tsp. cinnamon
This is such a low maintenance breakfast, especially when you prepare a batch as pre-made pantry mixes. This is quickly made while you have out all the ingredients! It is especially simple with our recipe kit which includes the directions, jar labels and instruction labels. I like to prepare 6 jars at a time but larger families may want to make a dozen of them. What is also nice is that if time is really critical, you can just dump the batter into an 8 by 8 pan for less labor.
To Make the Mix ~
Place inside a quart-sized jar the following ingredients:
• 3 c. oatmeal
• 2 tsp. baking powder
• 1 tsp. sea salt
• 1/2 tsp. cinnamon
Place lid firmly back on jar and give it a good shake for a final blend. The mix is now complete. Simply label and attach directions to the oatmeal mix (our short cut direction labels are found on the printable).
To Prepare the Muffins and/or Baked Oatmeal Dish ~
Preheat oven to 350 degrees Fahrenheit.
Mix together in a medium mixing bowl:
- ½ c. oil (we like to use sunflower oil or coconut oil)
- 2 eggs, beaten
- ½ c. honey
- 1 c. milk
- oatmeal muffin mix
~~ Divide mixture into 12 lined/greased muffin cups and bake for 350 degrees for 20-25 minutes or until golden around sides.
OR
~~ If in a hurry, pour mixture into greased 8 by 8 dish and bake at 350 degrees for 30-35 minutes until golden brown and set.
The nice thing about making your own mixes is that you can control the quality of ingredients. Instead of iodized table salt, we were able to use the healthy Himalayan pink salt. Instead of baking powder laden with cancer causing aluminum, we can choose the "clean" version. Instead of sugar in the recipe, we are able to use honey this time. It is a win-win and a wonderful way to stock your pantry!
My husband loves to take them out on the tractor with him as they keep him feeling full and satisfied in the early morning. Delicious and nutritious! ReplyDeleteDo you have a reliable pancake mix recipe? We love pancakes but the bought mix has recently become way too expensive. A good mix recipe would mean pancakes happening much more often for my children!

DeleteWell, all I can say is, Pass the muffins, please! I need to make a mix for these myself because some mornings it's just too much effort to measure everything. How smart you are to do half the work beforehand! I love baked oatmeal with crispy edges so I'll probably make this in a baking dish. Thank you for sharing your recipe. :)

Every morning it is too much effort to measure :) Sometimes I even measure the wet ingredients directly in the mixing bowl the night before (except the egg and milk) to make it go quicker. These are really addictive. I hope you try them :)

DeleteMy husband is on a no sugar regimen which disqualifies honey. It has essentially the same balance of glucose and fructose as refined white sugar and both are metabolized the same. Could unsweetened applesauce be used in place of the honey? I'm tempted to make them without honey or a replacement for honey. Love the 'ready made' jars with labels - so convenient and they look great in the pantry.

DeleteJES, this is my idea of fast food! Since time was limited this morning and these muffins sounded so delicious, I tried a little experiment last night. I made the batter (leaving out the baking powder) before bed and refrigerated it in a covered glass bowl overnight. I believed the oats would not mind an overnight bath in milk and honey. :) This morning, the batter was quite thick, as you would expect. I gently stirred in the baking powder and immediately baked them since there wasn't time for the batter to come to room temperature. They were moist, warming, and wonderful! And I am certain there are aromatherapeutic benefits derived from inhaling freshly-baked muffins at the beginning of your day. :) Thank you for another great idea. Nancy D.

ReplyDeleteOh, I am totally in love with this recipe! I love oatmeal. My husband makes it for me. I would like to put these jars together for my family and friends this year as gifts.
NOTE: Is there anyway you can make a change to the mix? You typed bake FOR 350 degrees instead of bake AT 350 degrees. You and I, as most women know what you are saying, but my wish is to make these in jars, give to my family and friends along with about 25-35 jars to my grand-daughter who is attending school out-of-state. I know she will pass these out to other students so I'd hate to send it stating bake FOR instead of bake AT 350 degrees.
I have no clue how to make a change on the computer. I'm totally in love with this recipe and I know everyone that receives a gift jar will appreciate them as well.
If I knew more about the computer or how to make that one little change, I'd be sitting here all day printing these out and making the labels.
Thank you for this outstanding recipe and gift idea. If there is anyway you can instruct me how to make that simple change on my side of the screen, I'd sure appreciate the help.

ReplyDeleteHi Marlana, I am so glad you all liked them! I just use regular paper and a glue stick. When I finish a mix, I simply wipe out the jars and put them back on the pantry shelf unto I am ready to restock the ingredients. Hope this helps :)
DeleteWe loved this! I substituted the eggs with 2 tbsp of Flax and 3 tbsp water. I also substituted the oil with 1/2 cup natural, unsweetened applesauce. We baked it in a dish, cut into squares, and served with almond milk on top. Delish!!! Thank you :)

DeleteI love oatmeal muffins so I had to try this recipe. I really have to admit that I wasn't expecting much because it was basically just oatmeal and not a whole lot more. But if it turned out, it would be a very convenient mix for the pantry. Well, the first batch disappeared within 24 hours. Everyone loved it. I have downloaded and printed the recipe and labels now, and have made up a mason jar for the next batch. I need to get to the Bulk Store to pick up more oatmeal. Thank you very much for this muffin in a jar "kit".

Being a farmer's daughter I always butter abundantly my muffins but yours need no addition at all. They are good cold from the fridge too which I would not have expected. Love the sweetness of the honey and I did add raisins too. So good. Thanks so much for sharing such a great go to recipe for oatmeal muffins!

DeleteThis is the first time I have read your blog. It's wonderful!! I do have one question regarding the mix. When you state "oatmeal muffin mix" you empty the whole jar in with the rest of the ingredients correct? I am just now starting to cook so wanted to make sure I understood correctly.

Anyways, YES, when you are ready to make the muffins, you prepare your wet ingredients into the bowl and then you add the contents from the muffin mix (which should be the measured out oatmeal, salt, cinnamon and baking powder) into the bowl with the measured out "wet" ingredients (aka honey, milk, etc). Hope this makes sense. If not, feel free to ask another question :)
